Delicious Lentil Salad
Ingredients:
1/2 cup chopped green olives
1 to 2 chopped tomatoes
1 cucumber, chopped
1 cup dry black or green lentils (cook according to package directions)
salt and pepper to taste
1 cup black or green lentils, cooked
1 tbsp dijon mustard
1 tbsp tamari
2 tbsp extra virgin olive oil
2 tbsp light balsamic vinegar or red wine vinegar
1 tsp maple syrup
1/3 cup finely chopped red onion or shallot
Step 1
Put onions, Tamari, vinegar, mustard, maple syrup and olive oil into a bowl. Then mix.
Step 2
Add the vinaigrette you just made into the bowl of cooked lentils. Then mix
Step 3
Add in chopped cucumbers, tomatoes and olives. Mix once more.
Step 4
Taste to see if you need pepper or more of anything else, if not, then plate and enjoy.
