Vegan Rice & Bean Pilaf
Ingredients
1/2 cup Bob's Red Mill13 bean mix (soaked over night)
1/2 cup brown rice
1 head kale, stems removed and minced
1 rib of celery, chopped
1.75 cups stock (leek stock)
1/2 tsp better than bouillon vegetable stock paste
2 tsp nutritional yeast
1/4 tsp turmeric
black pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Step 1
Add all ingredients to the instant pot and pressure cook for 25 minutes.
Allow the instant pot to naturally release.

Step 2
Remove the lid and stir.
Taste and adjust seasoning to suit your preference.

Serve with a drizzle of olive oil or butter flavoured coconut oil.
